Minestrone (quick and tasty!)

This recipe is posted for my favorite sister, MaryLou.  (Sue, Ann, & Marie, disregard the favorite word!  But let’s face it, she’s your favorite sister too!)

 Several years ago when Marilu Henner was starring in the broadway show “Annie Get Your Gun,” a fellow coach named JulieBenny from the Total Health Makeover boards at http://www.marilu.com came up with this recipe and named it for Annie. Here it is:
Annie Get Your Minestrone
In a large soup pot, saute until tender in 1 Tbsp. olive oil:
1 large chopped onion
2 cloves crushed or minced garlic

Add to soup pot:
4 C. veggie broth (I use Imagine Vegetable Broth)
16 oz can kidney beans, drained (I use smaller beans such as northern or navy beans)
14 oz can diced tomatoes, WITH liquid
2 medium carrots, diced

Simmer til carrots are tender. Then add:
1/2 C. dry whole wheat macaroni (elbows, corkscrews, etc.)
1/4 tsp. dry basil
1/4 tsp. dry oregano

Simmer til macaroni is al dente. Add:
10 oz frozen chopped spinach, thawed and squeezed
OR 1 bunch fresh spinach, chopped.

Simmer 5 minutes.

Serve with salad and bruschetta or garlic bread.
